Ingredients

  • 1 chicken
  • 1 oz butter
  • 1 mutton bone
  • 2 oz flour
  • 12 prunes
  • Milk
  • 4-5 leeks
  • Parsley
  • 4-5 potatoes

Method

Simmer the chicken, mutton and prunes, which give a wine like flavour, in some water for one and a half hours. Then add the chopped leeks and potatoes, and simmer for a further half an hour. Remove the bird and cover it with a white sauce made from the butter, flour, milk and parsley. Serve on a bed of the vegetables. Any remaining juice and meat can be used to make soup.
