Cock-A-Leekie Soup

Ingredients
- 1 chicken
- 1 oz butter
- 1 mutton bone
- 2 oz flour
- 12 prunes
- Milk
- 4-5 leeks
- Parsley
- 4-5 potatoes
Method
Simmer the chicken, mutton and prunes, which give a
wine like flavour, in some water for one and
a half hours. Then add the chopped leeks and potatoes, and simmer for a further half an hour. Remove the bird
and cover it with a white sauce made from the butter, flour, milk and parsley. Serve
on a bed of the vegetables. Any remaining juice and meat can be used to
make soup.
